Ayara Thai - Makrut Margarita

Serves 2

For the margarita:

  • 4 oz tequila

  • 2 oz fresh lime juice

  • 1 oz makrut simple syrup (see instructions below)

  • 1 oz orange liqueur such as Grand Marnier

  • Additional lime wedges for garnish

For the makrut syrup:

  • 1 cup sugar

  • 10 makrut leaves (also known as kaffir lime)

To make the syrup:

  1. Add one cup water and one cup sugar to a medium saucepan and place over medium-high heat.

  2. Add makrut leaves and bring to a boil, stirring occasionally.

  3. Allow to gently boil for 2-3 minutes, then remove from heat.

  4. Allow the makrut leaves to steep in the syrup at room temperature (we recommend at least 4 hours).

  5. Pour syrup through a fine mesh strainer to remove the leaves and into a glass gar or airtight container for storage.

  6. Syrup can be kept for 30 days in the refrigerator.

To make the margaritas:

  1. Prepare your glasses. You can start by adding a salt rim to the glasses. Then fill with ice.

  2. Add all margarita ingredients into a shaker with ice

  3. Shake for 15-20 seconds until fully chilled

  4. Strain into prepared glasses.

  5. Garnish with lime wedges and serve.
