Little Lion - Winter Citrus Fruit Salad


  • 4-5 oranges of different varieties (think Navel, blood orange, tangerines, even grapefruits.)

  • 1 lime

  • 1/2 cup fresh pomegranate seeds

  • 1 bunch fresh mint

  • 1 Tbsp honey

  • 1 Tbsp olive oil

  • Pinch kosher salt


  1. Begin by zesting 1/2 an orange and 1 lime. You should have approximately 2 teaspoons of orange zest and 1 teaspoon of lime zest. Juice the orange and lime into a bowl with the zests. Set aside.

  2. Remove the peel from the remaining oranges by slicing off the outer layer (fully removing the white pith). Then slice crosswise in 1/4 inch slices to give you nice rounds of fruit.

  3. Remove mint leaves from stems and roughly chop.

  4. Now take the bowl of zest and juice and add the honey and pinch of salt. Stir until fully dissolved. Slowly stream in olive oil.

  5. Arrange orange slices nicely on a plate. Drizzle dressing over top of the fruit. Sprinkle with pomegranate seeds and mint.
