1 egg yolk
1 Tbsp fine minced garlic
2-3 small canned anchovies
4 Tbsp white vinegar
1 cup extra virgin olive oil
1/2 cup grated parmesan cheese
2 Tbsp pickled mustard seeds (optional)
Salt and pepper to taste
Whisk egg yolk in a medium bowl until smooth.
Finely mince the anchovies and combine with garlic. Use a spoon to smash into a paste. Add to egg mixture. and whisk to combine.
While whisking, add in the vinegar, continue whisking until smooth.
Slowly stream in the oil while whisking continuously to create an emulsion. Once all oil is added, continue whisking for another 1-2 minutes to thicken.
Add in parmesan cheese, pickled mustard seeds (if using), salt and a few cracks of black pepper.
Taste and adjust seasoning as you like!
Use Caesar dressing to make a salad with romaine lettuce and croutons. Serve with ParmBoyz Chicken Parmesan.
