Coleslaw can be done 4hrs ahead of time kept in the refrigerator. Enjoy this simple and delicious side to balance the richness of your entree.
3 cups shredded green and/or purple cabbage
1/4 cup mayonnaise
2 Tbsp lime juice
2 Tbsp orange juice
1 Tbsp lemon juice
2 Tbsp chopped cilantro
1 tsp sugar
Salt & pepper to taste
Combine all ingredients except cabbage in a large mixing bowl, mix thoroughly.
Add cabbage to bowl and toss to combine.
Serve with Viewpoint’s Pork Adovado Mac & Cheese.
