In the eyes of Chef Angelo Sosa, every chef has their North Star —one person who inspires them above all others. For him, it was his Tia Carmen who opened his eyes to the joy of cooking. This dish is an ode to her; a comforting Dominican stew with tender chicken thighs, tomatoes, carrots, peppers, potatoes, olives and lots of spices.
