Provisional - Grilled Broccolini with White Wine Chili Sauce

Ingredients

  • 1 bunch Broccolini

  • 1 lemon, juiced

  • 1 cup white wine

  • 1 Tbsp butter

  • 1 Tbsp Calabrian Chiles, chopped

  • 1 Tbsp garlic, chopped

  • Salt & Pepper

Instructions

  1. Bring a large pot of water to a boil and blanch broccolini for 2-3 minutes. Remove from water and plunge immediately into an ice bath. Let rest for 5 minutes then strain from water.

  2. If you want, grill or broil the broccolini to give it some char.

  3. Heat a large saute pan over medium heat. Add a drizzle of olive oil to coat the pan. Add chilies and garlic and cook stirring frequently for 1-2 minutes until fragrant.

  4. Add wine to deglaze the pan– be sure to scrape up any garlic or chili pieces from the bottom of the pan.

  5. Cook for a few minutes until reduced.

  6. Add butter, lemon juice, and salt & pepper to taste.

  7. Add Broccolini. Coat in sauce and serve
