1/2 head small cabbage
1 medium carrot
2 Tbs rice vinegar
2 Tbs sugar
2 Tbs water
1/3 tsp fish sauce
Sesame seeds (optional)
Green onions (optional)
Finely shred the cabbage. Peel and grate or julienne the carrot. Add veggies into a medium mixing bowl.
Combine vinegar, sugar, water, and fish sauce in a small mixing bowl. Stir until sugar is dissolved.
Pour the dressing mixture over the vegetables and toss to combine.
Cover and place into the fridge for at least 30 minutes. Stir again and season with salt to taste before serving.
Garnish with a sprinkle of sesame seeds and slivered green onions if desired.
Serve with Sesame LA’s Vietnamese Meatballs, either as a rice bowl or layered as part of your banh mi sandwich.
