3 cups green cabbage, finely shredded
1 carrot, julienned or shredded
½ cup mayonnaise
1 tablespoon white vinegar
½ tablespoon cider vinegar
3 teaspoons sugar
½ teaspoon celery seeds
Salt & pepper to taste
Place carrots and cabbage into a medium mixing bowl and sprinkle with 1 teaspoon of salt and 1 teaspoon of sugar. Toss to combine, then set aside for 15 minutes.
In a small mixing bowl, combine all other ingredients and stir until fully combined. Adjust seasoning to taste.
Press firmly on the cabbage to squeeze out any liquid, then pour any water out of the bowl.
Add 2/3 of dressing and stir to combine. Add additional dressing until your desired consistency is reached.
Place in fridge for at least 30 minutes to chill before serving.
